Is it coffee

Look around and youll see many non-edible items that are tempting to eat. This candle by Shannie looks and smells like the real thing, a glass mug brimming with the finest of coffee beverages.

And its made from soy rather than petroleum products. Although soy is healthy, Shannie warns that the candle is not edible because of scents and other additives.

You cant eat any of her other soy-based products either, but Id recommend you try them as cosmetics, especially if you are sensitive or allergic to commercial lotions and lip glosses. Shannie found herself in that position and carefully created products that she could use on her own skin.

The scent-free lotion absorbs easily into my skin, and the lip gloss is smooth and soft. I find it difficult to get used to a lip gloss with no taste because I enjoy trying ones made for kiddies and that smell like grape juice and bubble gum. But if youre all grown-up, youll like Shannies version.

I havent tried the soap yet, but the Pink Rose Petal bar I bought is calling to me from the bathroom shelf where it is stored.

How it works

Tilapia are raised in a fish tank. Air pumps keep the water moving and deliver oxygen to the fish. Water flows by gravity from the fish tank into a filter where the solid fish wastes are taken out. The liquid portion of the wastes, containing nitrogen in the form of Ammonia, flow into the growing troughs. Here bacteria convert the ammonia to nitrates which are plant fertilizers. Vegetables, planted in small baskets inserted in a Styrofoam "raft", float on the trough with their roots dangling into the water. They pull all the nitrogen out of the water as food leaving the water clean to be pumped back to the fish.

The fish wastes dont contain everything that the plants need so we have to add a few things. Calcium carbonate (crushed sea shells) are added to keep the PH correct for both the fish and plants, as well as to supplement calcium which is a critical mineral for gowning plants. Iron, Magnesium and potassium need to be supplemented as well.

As in most cases, the whole is more than the sum of the parts. Joining an aquaculture and hydroponic system creates a whole ecosystem that solves some of the major problems when 
either of these two industries is operated independently.

Advantages of aquaponics:

Efficient Land Usage - Because of the efficiency in nutrient delivery to the plants in an aquaponic system, they can be planted together very densely, thus making more Efficient use of land. Ive heard that the planting density is up to 5x that in the ground. Combine this with even higher density for the first half of the plants life when it is on the sprouting table and that leads to very Efficient land usage.

Water Conservation - The only water consumed is from transpiration of the plants themselves plus a little for evaporation and a few leaks that might occur. Ive read that aquaponics can use as little as 1/10 the water of in ground farming

Low Labor - After the initial building of the system, it takes relatively low labor to maintain. Transplanting is effortless, weeding is minimal, and soil preparation is non existent.

Pests Deterred - Some pests are not an issue with aquaponics that would be for in ground gardening. In Hawaii specifically, wild pigs dont seem to mess with aquaponic systems, you dont have to worry about damaging nematodes that live in the ground, and rat lung worm slugs can be more easily controlled.

Drawbacks:

High initial Investment - Costs of building materials, pumps, etc is much larger than in ground gardening.

Needs constant attention - although the overall number of hours to maintain is low, it does need attention once or twice a day to feed fish, water seedlings, and to just make sure everything is operating OK. Probably only 10-15 minutes a day, but that is every day. So its just like having a pet, youll need someone to take care of it when youre out of town. Here is where economy of scale really comes into play....it takes just as long to feed the fish in a commercial system with thousands of square feet of gowning area as it does to feed a small home system with 10s of square feet of growing area.

Aquaponics Guides Growbed Advice

Types of Growing areas used

Aquaponics systems use several common components and the growbed (the hydroponic part of the system) is obviously one of the most crucial. The choice of growbed is also much debated, with newcomers to aquaponics often wondering what they can use, repurpose, build, scavenge or buy for use in their backyard aquaponics systems. Before looking at some of these choices we should note that there are three main types of growing systems that are usually used:

• DWC or Deep Water Channels, which are long, deep troughs that hold floating rafts

• NFT channels (Nutrient Film Technique) which are usually found in hydroponics setups.

• The final type is the media filled growbed, and this is the type that we will concentrate on in this article.

Types of Filtration

An aquaponics media filled growbed is simply a suitable container that is filled with a growing media such as gravel, hydroton or lava rock, and is the most commonly used type of growbed as it neatly performs four separate functions in an aquaponics setup. Firstly and most obviously it provides support for the plants up and provides somewhere for the roots to take hold. In addition to this, the media provides three separate filtering functions:

• Mechanical Filtration - the media helps to filter the solid waste in the water and to trap it in the bottom of the growbed.

• Mineralization - this is the process whereby the solid waste breaks down and is returned to the water so that the plants can use it.

• Biological filtration - the media provides extensive surface area for the beneficial bacteria to colonise.

As the media filled growbed performs all of these functions in one single place, it is one of the easiest, most space-efficient and also one of the most cost-effective ways to set up a new system. This is of particular concern to newcomers to aquaponics who may not feel comfortable with more complicated filtration systems, or who want the most hassle-free way to start supplementing their diets with fresh, nutritious produce grown via aquaponics.

So what can you use for a growbed?

The short answer is almost anything, but there are a number of things you should take into consideration, including whether your growbed will be located inside or outside. It goes without saying that the growbed needs to be waterproof, but you need to make absolutely certain of this.

It also needs to be strong enough to hold the media and the water - depending on the size of the growbed this could equate to a fairly significant amount of pressure... an important consideration if you decide to make a growbed yourself.

Any watertight, food-safe, fish-safe container can be used, and depending on the size of your whole aquaponics system that will leave you with several choices.

•Small systems can use food containers, plastic containers from the DIY store or IKEA, wooden boxes with a suitable liner - almost anything that will fit the size of your fish tank.

•Medium sized systems can use cut up IBC totes, Rubbermaid-type water troughs, animal feed troughs, concrete mixing troughs and similar things.

•Larger sized systems can use multiple units from above, hand built and lined wooden growbeds, and of course, commercially available aquaponics growbeds.

Aquaponics Growbed Materials

A growbed can be made out of a wide variety of materials but care should be taken to make sure it fulfills certain criteria. A growbed should be safe to use first and foremost, and should be made of a materials that will not leak unwanted chemicals into the water, or that will affect the pH of the water.

A growbed should ideally be made of a material that blocks out the sun, as direct sunlight can promote algae growth and can be detrimental to plant roots. If the growbed is being used outside then it will also need to be UV stabilized to ensure that it will not degrade in the sunlight and leach chemicals into the system.

Commonly used materials would be certain plastics, wood, fiberglass and anything with suitable waterproof liners. Concrete can also be used but care needs to be taken to seal the concrete first as concrete can affect negatively affect the water chemistry of your system.

Growbed depth and Size

An aquaponic growbed needs to be the right size to fit your fish tank volume. It needs to be able to provide adequate mechanical filtration and biological filtration for the nutrient-rich water, and so you should always consider the growbed and the fish tank together and use appropriately corresponding sizes.

A common rule of thumb is to use a 1-1 ratio. The growbed volume should be equal to the fish tank volume. This is by no means a hard-and-fast rule but serves as an outline guide.

The plants in your system are also part of your filtration process and so you must ensure that you have adequate surface growing area relative to the same of your fish tank. As a rule of thumb, if 1000 litres of water needs approximately 1 meter cubed of growbed media volume for filtration, then if your growbed is 25cms deep you will need a surface area of approximately 1m x 4m to ensure that there is approximately 1 meter cubed of media volume.

•The surface layer (5cms) - this is above the waterline and should not be wet - this reduces loss of water through evaporation.

•The root layer (20cms) - this is where your roots will be growing and where most plant activity will take place. This is layer is normally regularly flooded and drained.

• The solids layer (5cms) - this is where the solid waste will collect in your system and which will usually be constantly flooded with water.

From these layers we can work out a kind of ideal depth of 30cms or 12 inches. Whilst this depth has been proven to be highly effective it is by no means then only depth that can be used. Aquaponics systems have been shown to work equally well with growbed depths of as little as 10cms or so - but care needs to be taken to always ensure that you have sufficient volume to provide adequate filtration for your system.

...and finally...

At the end of the day, dont feel that you have to use a specific size and type of growbed. As long as it is safe, strong and appropriately sized for the system that you are building, then it will be worth trying out.

If you can build a growbed that is 30cms deep then you can be confident that this is a tried-and-tested depth that has been proven to provide very effective results - but you can also rest assured that a shallower or deeper growbed is also likely to give you good results.

Keep in mind that of the four functions that a growbed traditionally performs, three of those are related to filtration, and so your main consideration when choosing a growbed size, is to ensure that it is able to provide adequate filtration for your own aquaponics system, including adequate planting area.

Dont be afraid to be creative - as long as you can follow the guidelines noted above, then try anything that you have to hand - or anything that you think would look great. Put safety first and you cant really go too far wrong

Pickle Soup

Yes, there is such a thing as pickle soup, although cookbook author Ginny McDonald suggests serving this as an appetizer, in a cup eaten before the meal.

The recipe comes from Ginnys cookbook, "Recipes to Warm the Heart: Soups, Stews, and Breads." She has also written two others, "Recipes from the Heart" and "Recipes from the Heart of Montana." All three books contain original recipes, most from the kitchens of her grandmother and great grandmother.

Ginny says it was a lot of work translating the recipes for modern cooks. After long experimentation she decided that "butter the size of an egg" meant about 1/3 cup and a "teacup" of something measured out to 1/2 cup.

Some recipes came from other sources through Ginnys unrelenting efforts to discover how to make things she has enjoyed eating while dining out. The Dill Pickle Soup, for example, was originally savored many years ago at a gourmet restaurant in Oregon.

Over occasional protests from her then-teenagers, Ginny persevered to test each recipe on her family until it met unanimous approval. Because of this, I can highly recommend these as tried-and-true recipes that come out tasty every time I make something.

And all ingredients are things you are likely find in your own kitchen; if not, feel free to substitute.

"Be creative," Ginny urges. "I do that a lot. If I run out of this or that, I use something else."

Ginny also recommends finding ways to cut back on trips to the store. One tip she finds helpful is to buy bulk cheese, shred it, and store it in serving-size bags in the freezer.

"Through the years you kind of learn all these tricks," Ginny says.

One trick youll like is to make this soup and watch the expression on your guests faces. "Surprise" is the key word here. I took a pot to my churchs Lenten Soup and Bread night, and everyone agreed it tastes way better than it sounds. I describe the flavor as heavy on the dill but not "pickley."

[In the following recipe, my comments are in brackets.]

Dill Pickle Soup

This soup sounds unusual, but it is a delicious surprise.
Traditionally, a winter soup, it can be served all year.

1 cup butter [yes, this is a lot of butter, but Ginny insists it is necessary for the roux that is the basis of the soup; you can experiment with less.]

1/2 cup flour

1 - 1/2 quarts chicken broth

1 - 1/2 cups dill pickles, shredded or finely chopped [about 3 large pickles]

1 cup white wine

1/2 medium onion, finely chopped

3 tablespoons sugar

2 tablespoons vinegar

1 tablespoon Worcestershire sauce

3 to 4 teaspoons minced garlic

2 teaspoons salt

1 teaspoon dill weed

1 teaspoon curry powder

1/2 teaspoon white pepper

2 bay leaves [in my opinion, optional]

2 cups warm milk

Dash of green food coloring [I left this out, preferring the natural yellow color, flecked with dark green dill]

Croutons

In a large kettle, melt butter. Add flour; cook and stir until bubbly. Gradually add broth. [Use a whisk to incorporate flour and broth. Keep those lumps away!] Add next 12 ingredients and bring to a boil over medium heat. Reduce heat; add milk. Remove bay leaves. Add food coloring and garnish with croutons. [In the photo, you see my clever idea was to add more pickles.]

Yield: 2 quarts, or 8 to 10 servings.

Beckys Berries have it your way

I run across Becky of Beckys Berries with her stacks of sparkling jars of jam and other sweet products everywhere it seems. She sells at farmers markets, the annual Made in Montana show, and the Montana Agri-Trade Exposition (shown above), among many other places. I also find her treats at local shops.

And I really like the flavor combinations she comes up with: raspberries, blueberries, strawberries, and marionberries (called Traffic Jam; add jalapeno peppers and you get Road Rage Jalapeno Pepper Jelly); Strawberry Rhubarb Jam; Pineapple Jalapeno Pepper Jelly; blackberry and chipolte peppers (Black Bear Chipolte Glaze).

And while its heavenly to simply spread Beckys jams on toast or pancakes in the morning, there are many ways to enjoy them throughout the day.

The following are a few ideas I came up with. I am not a chef, and in any case I like to keep things simple, so dont expect blue-ribbon winners here. Thats why Id also like to know what offbeat uses you find for jams and jellies.

I just adore grilled cheesy toast. Often I top it with sliced tomatoes or salsa. But how about Raspberry Chipolte Glaze? This glaze is also a tasty addition to a turkey sandwich.

The chipolte glazes are a lovely blend of hot and sweet. Betty at the Cinnabar Creek shop in Big Timber suggested mixing one of them with balsamic vinegar and pouring over a spinach salad topped with blue cheese crumbles and toasted walnuts. I tried this and highly recommend it!

Another savory idea is to mix together any jam, jelly, or glaze with your choice of salsa. This could top a taco or brighten up a bag of dipping chips. I think Paul and Becky make such a sweet and spicy couple!

Stir jam, jelly, or glaze into yogurt or a smoothie. Putting jam on ice cream is nothing new, but do try one of Beckys hot and spicy blends for a bright new taste.

To be honest, when a sweet fix is needed immediately, I dont hesitate to dip a spoon straight into the jar!

Wacky cake

Kids have eclectic tastes, and we must admire them for it.

The Big Timber Grade School Cookbook (2008) is a unique collection of kid-approved recipes that you might like to try yourself even if you dont have kids. Guaranteed the kids in your life will find plenty to enjoy.

The book was compiled as a fund-raiser for the Big Timber grade school, and it is the best community cookbook I have tried. Among the classic recipes are brownies, fried bologna sandwiches, and pizza, all kid pleasers no matter how you make them.

But recipes you might not find anywhere else (or hardly anywhere else) include Vanishing Oatmeal, Sparkly Cupcakes, Dinosaur Chow, and (would you want to leave Santa out?) Magic Reindeer Food.

To give you a real taste of what this cookbook can do for you, I chose to make Wacky Cake -- or Whacky Cake, depending on which recipe you use; I combined the two recipes found in this cookbook. All you do is dump ingredients in a pan, stir a bit, and bake. If I can do it, so can you! Or at least your 5-year-old could.

W[h]acky Cake

Put in ungreased 8x8-inch pan and then stir to combine:

1 1/2 cups flour

1 cup sugar

3 tablespoons cocoa

1 teaspoon baking soda

Make three wells in the dry ingredients.

In one, place 1 teaspoon vanilla;

in another, place 1 tablespoon vinegar;

in another, place 5 tablespoons oil.

OK, this looks like one-eyed Pete, the spitting fool, but carry on . . .

Pour 1 cup cold water over all, and stir to mix all ingredients together. Do not beat.

Bake in a 350-degree oven for 35 minutes or until center springs back at a touch.

I did a slap-dash stir, which resulted in a wackier cake than the student who submitted it probably intended. Or maybe not. Make it yourself and do it any way you please.

One thing I must warn you about is that this is not a bakery shop cake. One recipe variation said: "No need to beat (this ruins the texture)." I am not sure what "texture" they are worried about ruining. It is a pretty chewy cake and even if you beat it, I dont think that will change much. But again, you be the judge in your own kitchen.

Its a nice cake, easy to make, and could be improved with a slathering of homemade chocolate frosting. (The recipe on the can of Hersheys Cocoa has been a long-time favorite of mine.) I mean, what wouldnt be improved with chocolate frosting??

Is it cheez

"We Cant Say Its Cheese" is a mouthful of a name to ask for at the store, but if you dont see this Bozeman-made Wayfare Foods product in a refrigerated case, do make an effort to find it.

This non-dairy spread is a real treat. Dont expect it to taste exactly like cheese, for of course it isnt, but it is close enough to be satisfying. And naturally, it is healthy, with ingredients like non-GMO oatmeal, pimentos, and cane juice.

There are a variety of flavors, and I can say the Hickory-Smoked Cheddar-Style Spread is, like, wow! Pictured on this blog post is the plain Cheddar-Style Spread. If you like that processed cheese spread stuff that comes in small glasses, this is similar in texture.

I bought one container, and now I wish Id really stocked up. Its a long way to the Billings co-op, but as soon as I get a chance, Ill be on my way to pick up more of this.

I tend to be a purist, so I looove it spread on crackers or bread, but you probably can think of other ways to use it. Maybe put it between Ritz crackers and make your own cheese crackers. There are recipes on the company Web site, so check that out. For example, the Cheddar Pie Crust, filled with apples, is an intriguing idea.

Whoop it up for Thanksgiving!

There are a whole lot of ways to celebrate Thanksgiving, but traditionally the feast includes pumpkin pie or pecan pie -- or both -- for dessert.

This year I made Gingerbread Whoopie Pies: delectable cream cheese filling sandwiched between whole-wheat gingerbread yumminess.
